When you think of Mexican food, what comes to mind first? Tacos? Burritos? Tamales? These are all very good, but there is so much more to Mexican food than these classic dishes.
Machaca
Machaca is a traditional breakfast meat from northern Mexico. It is similar to beef jerky, because it is spiced and dried, but the difference is that it is rehydrated and cooked, often with eggs, before being served.
Huevos Rancheros
Huevos rancheros (ranchers’ eggs) are a staple that you may have had before. This dish is one of the best-known Mexican breakfasts, and consists of corn tortillas layered with a tomato-based salsa and fried eggs, sometimes served with beans and cheese.
Huevos Albañil
Huevos albañil (bricklayers’ eggs) are put together like huevos rancheros, but they are served with tomatillo-based salsa verde instead of a tomato-based salsa roja.
Flan
Flan is one of those things that everyone has heard of but many people have never tried. It has been referred to as “Mexican pudding,” but it is much firmer and creamier than American pudding. Flan is a custard-like dessert topped with soft caramel known as dulce de leche.
Buñuelos
Buñuelos (translated doughnuts or fritters) are another delicious dessert food. In Mexican food, they are made by frying tortillas in oil and then coating them with cinnamon and sugar. (In other Hispanic cultures, they are sometimes made from fried balls of dough and resemble doughnut holes.)
